Fudge

This is the basic recipe. Easy to make and very sweet. Make it more rich by using 35% cream.

You will need a butter 6×10 inch pan, a saucepan, wooden spoon, whisk or electric beaters.

Ingredients

  • 750 ml brown sugar
  • 150 ml butter
  • 150 ml 18% cream
  • 250 ml icing sugar

Steps

  1. In a saucepan, mix brown sugar, cream and butter.  Bring to a boil. Cook for 5 minutes, stirring constantly.
  2. Remove fudge from the heat. Stir in the icing sugar and beat hard until creamy.
  3. Pour into buttered pan and chill.
  4. Cut into squares.

Simple Chocolate Truffles

This recipe is easy to make and makes a nice gift.

You will need a double-boiler, bowl, plate, wooden spoon. If you don’t have a double-boiler, you can melt chocolate in the microwave at a low heat but keep your eye on it: the chocolate will burn easily if the temperature is too high.

Ingredients

  • 6 oz milk or dark chocolate
  • 1/2 tsp cinnamon
  • 1-1/2 tsp unsalted butter, at room temperature
  • 4 oz less 1 T sweetened condensed milk
  • 1/2 tsp vanilla extract
  • 4 oz cocoa powder

Steps

  1. Melt the chocolate in a double-boiler with the butter. Remove from heat.
  2. Add cinnamon and mix well.
  3. Slowly stir in the milk and vanilla. Beat until smooth.
  4. Let cool. Then cover and place in the fridge until chilled (about 3 hours).
  5. Remove from fridge. Chocolate should be firm but pliable.
  6. Pour cocoa into dish.
  7. Roll chocolate into 3/4 inch balls and roll each ball in the cocoa.
  8. Store in a covered container between layers of waxed paper.

Alternatives

  • Roll the truffles in icing sugar or crushed nuts
  • Use 1/3 cup of whipping cream plus 1 T honey instead of the condensed milk.
  • Experiment with other spices in place of the cinnamon
  • Experiment with other flavourings such as mint extract, in place of the vanilla.

Quick Granola Snacks

Ingredients

  • 2 cups granola
  • 1/3 cup nuts
  • 1/4 cup dried cranberries, blueberries and/or raisins
  • 1/4 cup ground flax
  • 2 T pumpkin seeds
  • 2 T shredded coconut
  • 1/2 cup honey
  • 1/2 cup peanut butter, almond butter or similar product

Granola bars are a great option when you’re hiking or in lunch boxes but they can be expensive and it is soooo easy to make your own! PLUS you can make changes to the ingredients to suit your own taste.

Any dried fruit will do including dates or figs. Almonds are a good substitute for peanuts, but you can also try hazelnuts, macadamias, or pecans. Instead of peanut butter, try almond butter or Nutella.

To make these even healthier, start with an organic granola or make your own.

You will need a large bowl, a wooden spoon, a small saucepan, a plate covered in wax paper or sprayed with non-stick cooking spray.
This recipe makes about 20 snacks.

Steps

1. Mix the dry ingredients in a large bowl. Heating makes the honey more runny, but when it cools it will be thicker than before and help to hold the snacks together
2. Pour the honey into a small saucepan and bring to the boil for 30 seconds.
3. Stir in the peanut butter.
4. Pour the honey mix over granola and stir. This can take a bit of effort. Aim to get all the granola coated in the gooey honey mix.
5. Form the granola into balls. Place on a cooking sheet covered with wax paper and store in fridge til firm. Transfer to an airtight container. Since there are nuts in this mix, you may want to store these snacks in the fridge. They will keep for 2 weeks and travel well.

Pizza in a Pita

Ingredients

  • 4 small pitas or use any flatbread
  • 3 T olive oil
  • 1/2 cup tomato sauce
  • 4 oz. Mozzarella cheese
  • 2 oz grated parmesan cheese
  • 1/4 cup black olives (optional)
  • 2 plum tomatoes, diced
  • 2 baby eggplants, grilled and diced
  • 3 sprigs of fresh basil
  • Black pepper

Here’s an easy way to make a pizza-like lunch in minutes. Simply use a store-bought flatbread instead of the tricky to make pizza crust! Try pita pockets, naan bread, or chapattis. An artisinal, organic flatbread will really intensify the flavours.

  • Using a very fine grade of olive oil lightens the flavour.
  • Pizza depends on the mixing of flavours so balance and quality count.
  • Swap out any of the suggested toppings for your favorites.
  • Try adding a little cheddar.

You will need a sharp knife,  a pastry brush, a cookie sheet, a spatula.

Makes 4 servings.

Preheat the oven to 400°.

Directions

Step 1 Place the flatbread on a cookie sheet and brush with the olive oil.
Step 2 Pour the tomato sauce on and use a pastry brush to spread it toward the edges of the flatbread Spread the sauce to within 1/4 inch of the edge. If you go to the edge, the sauce will boil and spill over.
Step 3 Sprinkle on 1/2 the shredded cheese.
Step 4 Add the cut veggies and then cover with the rest of the cheese. Save a few slices of olive to top the cheese for decoration.
Step 5 Top with pepper and basil
Step 6 Bake on the bottom rack of the oven for 8 minutes To make these crustier, remove the pizzas from the tray and cook directly on the oven rack for a minute.
