Chicken Kiev

Ingredients

  • 4 chicken double breasts, skinned
  • 1 cups breadcrumbs
  • 2 eggs
  • 1/4 cup flour
  • 6 cloves garlic, minced
  • 5 oz butter, softened
  • 2 T parsley, chopped
  • pepper

Steps

  1. Beat together the garlic, butter and parsley. Add pepper to taste.
  2. Open the chicken breasts slightly and pipe a thick strip of garlic butter into each.
  3. Refrigerate for 1 hour
  4. Use remaining garlic butter to baste each breast.
  5. Roll in flour.
  6. Dredge in eggs.
  7. Roll in breadcrumbs.
  8. Fry in a deep fryer set to 320F, for 7 minutes or bake in oven at 350F for 20 minutes. Test with meat thermometer to be sure they are done.

Egg Frittata

You will need a small bowl and beaters, deep skillet with cover, wooden spatula

Ingredients

  • 1-1/2 cups assorted chopped vegetables, including red peppers
  • 1 tsp oil
  • 1 baked potato, diced
  • 1/2 cup vegetable or chicken broth
  • 2 tsp Italian herbs
  • 1/4 tsp chili
  • 8 eggs

Steps

  1. Use a deep skillet to saute the vegetables and potato in the oil.
  2. Add the broth and seasoning.
  3. Beat the eggs in a small bowl. Pour over vegetables. Cover and cook over low heat until the eggs are puffy.
  4. Serve

Hollandaise Sauce

Eggs Benedict is poached eggs over English muffins and a slice of ham, drizzled with Hollandaise sauce.  The sauce appears hard to make because it is made by steaming the yolks as you beat them and adding the other ingredients slowly. Keep an eye on the texture. It helps if you have 3 hands and fresh eggs.

Ingredients

  • 3 egg yolks
  • 3/4 cup butter
  • 1/2 tsp lemon juice
  • pinch cayenne pepper
  • pinch salt

Steps

  1. Whip the egg yolk in a stainless steel bowl over a pot of boiling water
  2. Gradually add the melted butter, lemon juice and seasonings.

Beef Bourguignon – Slow Cooked

Beef Bourguignon is a french dish made for kings. This version takes advantage of a slow cooker to let the juices seep into the meat. One advantage of this recipe is that even cheap meat will  become tender, so consider using a pot roast or blade roast in place of stewing beef, or go upscale and use steaks.

You will need a skillet, wooden spatula, sharp knife, slow cooker

Ingredients

  • 1 cup pearl onions
  • boiling water
  • 1-2 T olive oil
  • 3 lbs beef, cut into cubes
  • 2 large mushrooms, sliced
  • 1 red pepper, sliced into strips
  • 1 cup dry red wine
  • 1 to 1-1/2 cup beef broth

Steps

  1. Boil the pearl onions in water for 3 minutes. Drain. Rinse in cool water. Cut through the thicker end and slip off the papery skin.
  2. Place peeled pearl onions in slow cooker.
  3. Brown the meat in the oil.  Do this in batches, removing the meat to the slow cooker as it is done.
  4. Use the same fat to brown the mushrooms.
  5. Brown the mushrooms and red peppers.
  6. Layer the vegetables into the slow cooker.
  7. Pour the wine into the same skillet and reduce by a third.
  8. Pour the wine over the meat and vegetables.
  9. Add the broth.
  10. Cook on low for 8-10 hours.

Marinated Pork Tenderloin

Ingredients

  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 4 T sherry
  • 3 T onions, chopped
  • 2 tsp cinnamon
  • 4 T vegetable oil
  • 1 clove garlic, crushed
  • 2 pork tenderloin

Steps

  1. Mix all the ingredients apart from the pork  in a small bowl.
  2. Pour half of the marinade into a shallow dish. Add the tenderloins. Cover and let marinate in the fridge for at least 6 hours, turning once.
  3. Pour the other half of the marinade into a saucepan and slowly add 2 T flour. Stir until smooth. Heat to a boil and simmer on high for 2 minutes, stirring often. Set aside.
  4. Arrange carrots and onions in the bottom of a slow cooker.
  5. Arrange tenderloins over the vegetables.
  6. Pour the remaining sauce over the tenderloins.
  7. Cook on low for 6-7 hours.

Alternative

  • You can also BBQ the tenderloin using the extra marinade as a basting sauce.

Pork Roast with Orange-Apricot Chutney

I almost always start a roast at 500F to cook the outside quickly, locking in the flavours. Make sure you turn down the heat as soon as the roast goes in. Most meats cook at 325 or 350F. Slower cooking stirs the juices.

Ingredients

  • 1kg pork roast
  • 3 cloves garlic, cut into thin slices
  • 1 T rosemary, chopped fine
  • 1 T black pepper
  • 1 tsp sea salt
  • 1 tsp olive oil
  • 1 cup dried apricots, chopped small
  • juice of 1 medium orange
  • 1 T orange zest
  • 1/2 onion, chipped fine
  • 1/4 cup maple syrup
  • 3/4 cup vinegar
  • 1 tsp fresh ginger, grated
  • 1 tsp ground coriander

Steps

  1. Preheat oven to 500F.
  2. Trim any excess fat from roast. Cut diagonal incisions into surface. Insert strips of garlic into the incisions.
  3. Combine spices and salt. Rub into surface of roast, including underneath.
  4. Place roast in oven and reduce heat to 350F.  Bake for 1-1/2 hours. 155F on a meat thermometer.
  5. In a small saucepan, combine oil, orange, onion, maple syrup, vinegar, ginger, coriander and apricots.
  6. Heat to medium and simmer until the mix thickens, about 20 minutes.
  7. Serve over slices of pork.

Spinach Mushroom Cheese Casserole

Ingredients

  • 2 cups mushrooms, chopped
  • 1/2 cup butter
  • 2 packages of fresh spinach, chopped
  • 4 eggs
  • 3/4 cup plain yogurt
  • 1/2 tsp pepper
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup grated Swiss cheese

Steps

  1. Preheat oven to 450F.
  2. Saute the mushrooms in butter until brown (about 8 minutes).
  3. Boil the spinach, drain.
  4. Stir the spinach into the mushrooms.
  5. Arrange vegetables in the bottom of a 1-1/2 quart greased baking dish
  6. Beat together the eggs, yogurt, pepper and Parmesan cheese in a small bowl.
  7. Cover with Swiss cheese.
  8. Bake for 45 minutes.

Grilled Salmon Steaks

Salmon is a widespread fish but some of the best is BC salmon, so it makes sense to combine it with another great aroma that evokes the province: cedar.

Ingredients

  • 4 salmon steaks or fillets
  • 2 cedar cooking planks
  • 1/4 cup chives, chopped fine
  • 2 cloves garlic, minced
  • 1 tsp fresh rosemary, chopped fine or crushed
  • juice of 1 lemon
  • pepper

Steps

  1. Wash the salmon in cold water and chill.
  2. Completely soak the cedar planks for 2 hours.
  3. In a medium sized bowl, mix the remaining ingredients. Rub salmon in the marinade and chill for at least 2 hours.
  4. Preheat oven or BBQ to medium high heat.
  5. Arrange fish on planks.
  6. Place planks directly on BBQ. Cook for 8-10 minutes.

Pork Tourtiere

Ingredients

  • 1 medium potato, cooked and mashed. Save the water.
  • 1/2 cup of the water saved from cooking the potato
  • 1/2 tsp thyme
  • 1 lb ground pork
  • 1 medium onion, minced
  • 1/2 tsp sage
  • 1/4 tsp mustard
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp cloves
  • 1 pie shell

Steps

  1. Saute pork, potato water, onion, garlic and seasonings in a large skillet.
  2. Bring to boil then reduce heat. Simmer 25 minutes.
  3. Remove from heat and stir in the mashed potato. Chill.
  4. Preheat oven to 450F.
  5. Fill pastry-lined pie pan with the chilled meat.
  6. Cover with t layer of pastry. Cut vents in the surface.
  7. Bake for 20 minutes or until the crust is golden.

Options

Use beef or a combination of veal and beef instead of the pork.

Oriental Beef Casserole

This lively beef casserole takes advantage of the varied textures of ground beef, slivered almonds, toasted breadcrumbs, and crisp celery to create a rich meal.

You will need a bowl, a heavy skillet, 9 x 13 greased casserole dish, a wooden spatula, chopping board and knife, can opener and a spoon.

Ingredients

  • 1 lb lean ground beef
  • 1 T olive oil
  • 1 green pepper, sliced
  • 3 onions, chopped
  • 2 cups chopped celery
  • 10 oz mushrooms, sliced
  • 1/4 cup cream
  • 1 T soy sauce
  • 1 can condensed celery soup
  • 1/2 tsp black pepper
  • 1/2 cup fine breadcrumbs
  • 2 T melted butter
  • 1/2 cup sliced blanched almonds

Steps

  1. Preheat oven to 350F.
  2. Brown the beef in oil and place in a greased casserole
  3. Layer with vegetables.
  4. In a separate bowl, combine the soup, cream, soy sauce and pepper
  5. Pour over vegetables.
  6. Combine the breadcrumbs, melted butter and almonds
  7. Layer over cream layer.
  8. Bake for 30 minutes.
