Banana Fritters

Ingredients

  • 2 medium bananas, ripe but firm, peeled and chopped into big pieces
  • 1 cup flour
  • 1 1/2 T granulated sugar
  • 1 large egg, lightly beaten
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/2 cup milk
  • 3 cups vegetable oil for frying
  • sugar and cinnamon for dusting

Fritters are fruit coated in pancake batter and deep-fried.

You will need a deep saucepan or fryer, a bowl, spoon, slotted spoon, paper towels, cooling rack, paper bag.

Heat the oil to 360F. The hotter the oil the faster the fritters will fry, keeping them light and less oily.

Makes 15-20 fritters.

Directions

Step 1 Combine the flour, sugar, egg, salt and baking powder.
Step 2 Stir in the bananas and coat them well.

Add enough milk to make a thick batter.

Covering the bananas with flour helps prevent them going gooey while they fry.
Step 3 Once the oil is hot, drop batter in by large spoonfuls, a few at a time. Fritters will float to the surface and turn golden brown when they are ready.
Step 4 Use a slotted spoon to remove each fritter as soon as it is done and place on a cooling rack or paper towels to drain.
Step 5 Pour sugar and cinnamon into a paper bag. Drop fritters into the bag and shake to dust.
Step 6 Serve while hot.
